Chocolate Covered Strawberries
Ingredients
- 1 lb Strawberries
- 1 cup Enjoy Life Mini Chips
- 1 tbsp Coconut oil
Instructions
- Clean and rinse strawberries over water. Leave out to air dry or pat dry.
- Bring a small pot of water to a boil then put on simmer heat.
- Place a large glass or ceramic bowl over the pot. Pour in the chocolate chips and coconut oil. Mix till melted.
- Dip strawberries in the chocolate covering all sides.
- Place strawberries on parchment lined baking sheet.
- Sprinkle with nuts of choice.
- Refrigerate for 10-15 minutes.
- Enjoy!

This is just the average Chocolate Covered Strawberries sprinkled with crushed nuts, but we’ve made it vegan. Not too shabby and the kids loved every bite of it.
Confession: I hid some for myself at the back of the fridge in an old butter container. Who’s going to touch that? Am I right?
