Brazilian Black Beans

Ingredients

  • 2 tbsp olive oil
  • 1 large onion (chopped)
  • 2+ cloves garlic (chopped) 2 or more
  • 1 extra large bay leaf
  • 3 15 oz cans black beans
  • 1 tbsp oregano
  • ½ large squeezed orange

Instructions

  • Saute onions, garlic, until translucent with the bay leaf on medium heat.
  • Add black beans and oregano. Bring to a boil.
  • Take out of heat and squeeze the juice out of the orange.
  • Add salt to taste.

Notes

Eat with a side of white rice and fried plantains.

The easiest recipe inspired by a black bean dish at a Brazilian restaurant. The orange juice is the secret ingredient that brings it all together. We add it at the end off the heat because we don’t want it to cook but to flavor.

My kids and the husband request me to cook this recipe often. They cant get enough of it.
